i solemnly swear not to give a life story before a recipe
doughs are like humans, they need to rest.
buy a bowl scraper; its a giant spatula that i use as a palm extension. scrape, mix, fold, move, hold - i use mine everyday outside of baking.
dont limit coriander to just the leaves, the stems are palatable and flavourful
compost, it's polite.
buy a kitchen scale. it will make recipe following so easy, especially in baking. no more measuring cups, you just dump in your ingredients into a bowl. even cutting your recipe in half/ doubling becomes easier.
regarding bread making: use your hands whenever possible, the more acquainted you get with the feel of the dough, the better you can fix your mistakes
read the book 'salt, fat, acid, heat'
don't be intimidated by going into a cultural food store that isnt yours. enter, ask, purchase something unusual and try to cook with it, its fun.
chocolate chips are the boringest thing to happen to baking. just chop your chocolate in pieces and have them in difference sizes. it will make your food more fun + interesting.
it tastes better if its in season. citrus season is my fav (duh, its fresh)
feeding a starter takes almost no time at all, and its worth the mess.
